I've traditionally put regular old due dates on online stuff but A: allow students who have any functional reason at all to just turn it in later (except the final paper, which I am very open about, repeatedly -- because I schedule it pretty close to the grade turnin deadline)
Something I'm very glad to see in this thread is the acknowledgement of us, the teachers, in the equation. A lot of *teachers* ignore that extra work and effort burdens us, too, and that there has to be a safety limit that each individual determines
Odds are your school has some kind of reporting mechanism for students in need. Go figure out how it works. Email your boss and make them tell you. Then you'll have to decide if you're actually gonna use it. That will take longer, and you'll probably need to use it to help decide
