Not to brag — but I made the best empanadas today
OK — so this tweet REALLY blew up.

Tons of ppl asking for the recipe, so here it goes — please note that in the times of COVID19 I had to improvise, so don’t get upset because this will not resemble your abuela’s recipe.

1LB of ground turkey
Salt to taste
Pepper to taste
Garlic powder
1 white onion
1 can of dice tomatoes WITH chilis
3/4 cup of beef broth

- Brown the mean and season it with salt, garlic powder, pepper as it cooks

- Drain excess liquid from the pan

- Add the onion and mix with the beef until it’s clear — make sure it cooks at MEDIUM heat

- Add the WHOLE can of diced tomatoes and chiles

- Add the beef broth

- Add 2 tbsp of SAZON (NOT THE GOYA ONE, find an alternative) and cover the pan/pot with a lid

- Cook at medium/low heat for 15 minutes

- Fill empanada discs with ONE spoonful of meat

- Fold disc, seal w/ fingers, press edges w a fork

- Brush the entire top of the empanadas with eggs whites

- Bake for 30 mins at 400 degrees

- You’re done!
