Sweet corn rant......
First, try not to buy sweet corn from a place that answers the question “what variety is it?” with “duh, bicolor”
Second, you want the ears that are less full. You get more corn on the full ears, but you want those kernels of goodness to explode when you bite in. Go for the younger stuff.
Three, and probably most important, YOU DON’T COOK SWEET CORN! Bring the water to a boil, add the corn, wait two minutes, the corn is ready. You only want to get it hot enough melt butter. Any longer and the sugar is turning to starch.
And four, if you really want to taste the good stuff, pick an ear, husk it and start eating, right there in the field. No prep required.
