Very regularly, @chelsmbanks and I talk about Chae. That wondrous restaurant meant so much to us as a couple and we met some really great humans there. Chef Taylor Desjarlais gave me the recipe for Oxtail Soup, standby for pics and the recipe!
Stock time: oxtails, onion, carrots, celery, 1/2 head of garlic, roma tomatoes, thyme, parsley, peppercorns. Or as @hepatitis_tee first told me: “add some herbs.” And yeah, this is as specific as this recipe is gonna get, folks.
Fill your pot 2-3” above with cold water, bring to a slow simmer and settle in. Skim off the gunk so hopefully you get that nice clear broth (realizing now that I should have successfully made this before I started this thread, shit).
