I have never had chop suey, Singapore noodles or General Tso’s chicken. The one time I’ve had crab rangoon and Mongolian beef I got very irrationally angry (what is this?). I’m going to embark on a journey to discover Chinese-American food. Coz I don’t know what it is!
One day I will set up a restaurant in Singapore that serves Singapore noodles. So that all the tourists who come expecting it can find it.
I think the biggest adjustment re the Chinese food I know and the majority of the Chinese food served I restaurants here is that I’m used to food being of a rather high quality, but Chinese-American food prioritizes vast quantities of cheap fast food, which is food I don’t love.
The the gap between the regular Chinese-American restaurant and a high quality Chinese restaurant, Chinese-American or not, is so large in availability and pricing.
I also think Chinese food from Southeast Asia is the best (Singaporean, Malaysian, Vietnamese and Thai Chinese food!), more than Chinese Chinese food (what even is that?), so it gets even harder for me to really identify with Chinese cuisine here. But I will try!
I also want to start a journey of exploring American processed foods. I’ve never had a microwaved burger or a whole meal made from a bag of frozen things premixed together. I keep getting FOMO walking past the frozen food aisles!
