Today's breakfast is gonna be a thread, picked the first poblano off our plant so I made some dressed up migas

Step 1: heat some canola oil over medium heat
Cut some white onion and add to pan, then cut the pepper and add it to the pan

Pull the peppers and onions out a little after they start to brown, then rip up corn tortillas and fry in the remaining oil (1 tortilla per 1 egg you plan to use)
Scramble eggs with the poblano and onion and a bit of salt and pepper

Once the tortillas have crisped up a bit add the egg mix to the pan and cook, stirring/flipping to break up the eggs
Right before they're done cooking (still see a little wetness but the eggs look like scrambled eggs) remove from heat and plate.

Like all eggs they'll finish cooking from residual heat

Garnish with cheese and salsa of choice. I used salsa verde and fresh shredded pepper jack. Always shred your own cheese if you can, pre shredded melts weird because preservatives
