Possibly unpopular character design opinion: you can absolutely make your lack of direction and struggle to create depth work to your advantage
You don't know what they want to do with their life? That's their journey now. They lack that one passion that makes them stand out? Let them go into the world to find it. Literally all that matters is that you add a personal touch to their story. Write what you know.
And if that means creating their character on a situational basis & establishing their personality as you go, that's cool too. Sometimes things just pop into place without you even noticing and you end up with a well-rounded character regardless, bc you did what came naturally
Of course those extremely detailed questionnaires can help you flesh them out. But if your soul isn't it, it won't matter whether your character likes orange juice or not. More detail doesn't necessarily equal a better character if it only distracts you from your story goals.
It all completely depends on what kind of writer you are and how you operate. I don't think there's a "right" or "wrong" way to approach character design as long as you end up creating something you love. A lot of the time that's all you need to make a connection with the reader.
