Much missed Mancunian food and drink places which were *years* ahead of their time:

*Mash and Air, roughly 98-00.
Wood-fired sourdough pizza, its own on-site microbrewery (you could see the tanks through the portholes) and relaxed fine-dining on the upper floor. So current!

High-end, serious Spanish cooking in a contemporary setting, with a focus on quality chacuterie, a Spanish wine list and a focus on sherries. It was *now*, but *then*!

Or Pintxos, the little basque food bar inspired by San Sebastian, which opened on Tib Lane. Both circa 2000?

As a wild card how about Willoughby's Wine Merchants,also on Tib Lane. Sold fine wines to Mancs...

...(as well as acting as an extension to the cellars of some the city's restaurants) for generations before shutting maybe 10-15 years ago. It missed the explosion in city centre residents and urban oenophiles by mere years, and now we have Salut, Hanging Ditch and more!
