I will try and analyze the gameplay footage of No More Heroes 3 seen on the NGPX stream despite Suda51 working against us.

First of all, what we've seen is an actual boss fight against one of the aliens. It proves once and for all they're not flukes but actual enemies in NMH3
The NMH3 boss fight also had music!
As is consistent with fan theory, the boss fight theme of this alien is one the songs present in the album 'WILD TOKYO' of the band Red Orca.

The track is called 'Phantom Skate', but the version in-game does not have vocals
Let's take a look at the UI. It is coming back to the pixel aesthetic of the first two NMH games, most specifically 1. However, it has four squares that is reminiscent of the skill chips of Travis Strikes Again.
This might be some kind of a placeholder icons for skill chip usage
Dark Side Mode is back, and interestingly enough it activates even during a boss fight now. Cherry used to slow enemies, though I was not able to determine if that is still the case in NMH3
The bottom right looks like a pixel art tiger. It could mean that ecstasy mode from NMH2 is back.

In NMH2, it used to power you up and then make you transform into an invincible tiger.

One interesting feature is that the tiger feeds from the blood of the alien. Killer7-like
You can now lock-on to the enemy just like in the original two games. This is the UI of the lock-on, which automatically readjust the camera. In the case of a big enemy like this alien, it also makes the camera step back to show the boss in its entirety
The boss fight also has a health bar on top, which is reminiscent of Travis Strikes Again. The battery icon is also the same as Travis Strikes Again, rather than the vertical battery and phallic slime from NMH1 and 2
Travis Touchdown can dodge roll, as is consistent with the series. He can also block with his beam katana
You can look at the blocking animation from Travis here. He is blocking at the same time he is locking on to the enemy
Reminder how the lock-on used to show you the number of hits you did in No More Heroes 1? I believe it might be what is happening here too.
There is also the finisher icon where you had to flick the wiimote a specific way. Though the icon doesn't take the whole screen anymore
The BIG question is: Is Travis jumping?
And the answer is: Yes.

Travis kept the jump button from Travis Strikes Again.
Though the animation seems a bit wonky lol
Travis Touchdown also has some effects that extends the look of his beam katana further. Not sure if this means his reach is higher or his attacks are stronger. It might be one of the features of the cherry power-up
You can see in the gif above that there is impact remanence, as in you can see the hits of the beam katana for a short while on the legs of the boss. Something that NMH2 also had
You cannot really see it here, but Travis obviously still has his jacking off animation to recharge the battery. You can see the battery recharging on the top right
Travis also had a special finisher attack with a different screen animation. Maybe the return of dark step? I am not sure but it looks different from the typical finisher
And then, you have the last scene with Travis and his new Schpeltiger as if he's going into another dimension.

The music in this scene is from 'beast test' by Red Orca
And this is all I have for now. You can see the attacks from the boss pretty clearly but I wouldn't read too much into it, they are consistent with the way he was designed.

Now I have seen enough of Suda's face for a few months at least...
