Maybe it's bc I haven't seen my family in months but that queer eye episode with the Mexican fish monger had me crying into my melted ice cream. Anyway, here are some photos of Peruvian dishes I've made during quar. I send these to my dad so he doesn't think I don't love him
Here's some lomo saltado. It's basically a stir fry with some aji amarillo for a kick. My dad's favorite
Papa a la huancaina. An appetizer of potatoes and eggs served cold over a bed of lettuce. The sauce is cream based and gets it's color from aji amarillo. Grandma swears saltine crackers are a better substitute for bread to thicken the sauce
The Peruvian version of chicken an rice is arroz verde. The color and flavor comes from cilantro and spinach. I've seen it prepped with other veggies like red peppers and carrots. I didn't have those on hand when I made this batch. Don't forget the dab of aji amarillo!
Tallarines verdes translates to green noodles. It's basically our version of pesto with walnuts instead of pine nuts. Get this, we also use queso fresco. My plating could use some work but yolo
Here we have the bare bones version of arroz chaufa, my favorite Chifa dish. Peru's food was largely influenced by Chinese immigrants in the country. Here we have a fried rice medley with hot dogs! I had no veggies to add at the time or chicken, which can sub the hot dog bits
And finally, my recent botched attempt at aji de gallina. It's a chicken stew type of dish. It's supposed to be a yellow mustard like color. But someone (me) went too hard on the aji panca (a Peruvian red pepper) instead of the aji amarillo
