So first, you must understand that speaking is truly an art form that's purely psychological. If you don't have it all together mentally, your speech would be all wobbly and sound lame and you'll be feeling sorry for yourself why you didn't sound better...
Ever notice why you always seem to be stumbling on your words when you're angry, sad, scared, surprised, too excited or some other emotional feeling? It's because when adrenaline starts to pump, the brain loses it's ability to really think and compose itself
So, generally, if you can help it, don't try to speak during these times, however, if you must, here are some steps to help you handle it well and leave a great impression on your audience or those listening to you...
1) STEADY YOUR NERVES: like I said earlier, when your adrenaline is pumping, your brain loses it's ability to think and function in reason.

So take a deep breath, steady your nerves, calm yourself before speaking. That's how these big public speakers do it.
2) GO THROUGH THE MOTION: After you're in control of your emotions and you can think clearly now, go through all you have to say in your head, in a few seconds, arrange your speech, know what you want to say and ensure your message sticks out and is passed.
3) SPEAK CALMLY: When you finally start speaking, be as calm as possible, when you start shouting or yelling, or giving into your emotions, you don't come off as confident and no one really would take you seriously.
4) ENSURE YOU ARE BEING UNDERSTOOD: It matters not if you're on a stage or you're just talking to someone or a group of people, but as you speak, make sure they're following. Use phrases like

"Do you understand", "right?" "Are you following"?
When you do all these things, you not only gain control of your emotions but also, the respect of people as you would have spoken confidently and they would be drawn to you and ultimately what you are passing across.
