We jumped ahead a few weeks because I had some homemade sandwich bread still and made a Peanut butter and jelly sandwich for Avie.
Lol! These Banh Mi buns suck! but just remember that sucking at something is the first step towards being kind of good at something.

This is one incredible sandwich!
Bread recipe is a bit fussy but it goes like this:
250g bread flour (~13% protein)
180g water
10g powdered whole milk
10g sugar
5g yeast
3g Diastolic Malt Powder
2g sea salt

Knead until dough passes the windowpane test

After initial rise, separate into four chunks of about 110g each. Pat them flat and do your best to make a mini baguette - there are videos.
Make sure you get a gluten cloak. Place on baguette tray.
Oven 475F, steam tray on the bottom.
Bake 6 min.

Remove from baguette tray and bake upside down another 7-8 minutes (for cracklin crust).

I tried to roast some turkey thighs and they were not tasty, boxed stuffing which is just salt and the only good bits were the bread, jelly cranberry. This is definitely a sandwich that has to be made after Thanksgiving when you've got proper leftovers. 2/10

Lobster rolls are next. Based on the failure of the last sandwich because of the crummy ingredients should I buy an actual whole lobster (I'm single, no one I know likes Lobster), just get some tails, or can I do canned?
There is such a lovely breeze blowing through the house today that I can make bread even though it's still very warm here. Bread for the turkey club which I am going to enjoy tomorrow!

Camping the next two days but getting a head start on the Reuben which requires (absolutely must have) marble rye. In order to biga-up my flavor for this loaf, I'm using a poolish - which is equal parts flour, water, and a scant pinch of yeast. Think of it as "quick sourdough".
Poolish just looks like a mess right now but in two days it will be bubbly and good looking. I will store in the fridge, aka the "Maguire". My flour mix is 2/3 all purpose, 1/3 rye and pumpernickel (which is also rye)
Sandwich number 17, the Reuben. Homemade ginger beer in the background delicious, and yes this sandwich is rather rubenesque.

Number 18 the gyro. I made the meat (lamb) at home but honestly don't recommend it. There is just something special (probably a ton of fat) about the swirling stick of meat at a real gyro/kebab shop. Everything else is great!
A couple things about this: my research suggests that the meat stick thing has a lot of binders (making it more like scrapple) and meaning that it's going to stay juicier. Sadly, I didn't do this research until just now after I made a dry meat.
I also loved the hot sauce ("chili sauce") I made. It's sweet but very spicy and works incredibly well with the other flavors here.
And finally... I skimped on size on the pita bread. Next time I'd make them about 50% larger.

Triple fried egg sandwich with chili sauce and chutney. Got to share this beautiful beast with my best friend Cleveland who was my Red Dwarf buddy back in college (the 90s!!!). Sandwiches are good, sharing is better! #reddwarf
The shrimp po'boy. (Also Avie made a ham and cheese with a side of shrimp). When this is all done I think I will have a first division and second division with Champions League places. And I think this might make the Champions League.
Made a apple butter and cheddar panini on homemade ciabatta. The kid says it's awesome. I agree. (Good ciabatta, faile ciabatta - you got to fail at something a bunch of times before you can get it right!)
#20 the caprese: ciabatta was the hardest loaf of bread to make. Weird sandwich, I love all components but when put together it's just.. bland.
