I needed a Sunday project and while I’m frankly tired of cooking the @foodandwine summer issue arrived a few days ago.
I’ll admit the lobster BLT looks good, but I do t think we’re living in lobster BLT times...
So I’m flipping through and come across this picture.
I present to you the Potato, Bacon, and Cheddar tart.
A little later today I’ll document my journey to create this monster. But first let’s look at the ingredients and “nutritional value.”
🥓 - 2lb - 4800 calories
🧀 - 1lb - 1800 calories
🥔 - 2.5lb - 1000 calories
Various aromatics - rounding error

So we are talking 7600 calories in this dish or roughly 4 days worth.
The thing that really convinced me to make this was the diagram that comes along with the recipe. I would like to think there is a guy at Food and Wine who has been waiting to draw instructions on how to layer 8000 calories worth of bacon and potatoes in a pan.
I can’t decide if it is more Cooks Illustrated or Spy vs Spy
Also I just realized the diagram credit is right there. Thank you @winslowtaft for easing my fears about properly creating the potato, bacon, and cheddar tart.
