How to reduce the risk of pay problems

I definitely agree with scanning and archiving everything

I also use a spreadsheet to record each payslip and cross reference this with tax documents

Beware paperless statements only go back ~3 yrs depending on bank, archive these too
Difficult to reduce issues with HMRC at rotation date

Key is to forward P45 ASAP!

As you don't move on the first of the month you often receive 2 payslips in a month (e.g. August) thus receive tax-free allowance from both employers > underpaying!
What to do when it goes wrong

Agree a timescale - earlier payment (i.e. not next cycle) IS possible, ask for it if needed

Written follow-up to ensure a paper trail
