Good morning, Arks. With PSO2 finally launching on PC tomorrow, I though I'd share some tips I picked up from my time with the Xbox version.
The Fighter, Gunner, and Techter classes aren't available at character creation, as they were added to the game after launch in Japan. Once you finish the tutorial, find the NPC named Bhea, and you can switch to any class, including these three.
There's a lot to do in this game (and more to come!) and it can get a bit overwhelming. The best advice I can give is to follow the "Main Missions" in your quest menu. These will guide you through all the various systems the game has to offer, unlocking things along the way.
The NPCs it tells you to talk to usually have tutorial quests. Afin will teach you the basics of skills and combat. Jan will teach enhancing equipment. Franca's team teaches crafting. Cofy's the really important one. She unlocks extra abilities like subclasses and your Mag.
When you start out, head to the quest counter and try the Practice Quests for each class. They'll give you a small tutorial on how each one is designed to play, and can give you a good idea of whether you'll like it or not.
Skill builds and Mag leveling are the only things I would encourage you to research ahead of time, as fixing these later will usually require spending real money. There's a community guides around, but here's a good place to start: https://arks-layer.com/naclassbuilds 
With regards to real money, the Premium Set is a great convenience, but not necessary. It costs roughly the same as a 1-month subscription to most MMOs, and that's fine for me, but feel free to make your own decision.
The biggest benefits to premium are full housing access, extra storage, the ability to accept more client orders (which I find VERY helpful), and the ability to sell items on the market.
There's an item you can earn in-game that will grant you temporary 3 day access to the market. So you can save up your stuff, pop the item, and put them all up for sale in that window if you don't want to spend the money on premium.

You can always buy from the market any time.
Premium also gives you "free" access to the monthly Mission Pass, which contains fun cosmetic items and some other useful boosts. Without premium, you can purchase the pass with Star Gems, which is a second currency you can buy with real money or earn in-game.
Feel free to use your experience boosts. Unlike other free-to-play games, PSO2 gives you tons of these things, with more easily obtainable in-game. I started off hoarding them, then realized I had plenty. I've had the basic "Triboost" item active for almost 100% of my playtime.
Summoners are really cool, but may not be the best choice for your first class. You'll only have one pet for a long time, as obtaining new pets is easier at high levels, and leveling can be expensive. Also, they only have one weapon available until new content is added.
