Fine, I’ll make some Chicken Tikka Masala tonight, a thread:
Will be tweeting my recipe since people ask it sometimes. First, take ginger and garlic, amount: if you’re wondering if this is enough, it’s probably not. Mince in a food processor.
Cut chicken into bite sized pieces, add a cup of plain yogurt, Kashmiri chili (paprika is acceptable replacement) turmeric, hella garam masala, too much ginger-garlic, some cumin and salt to taste
This is what you’re looking for, marinate for at least 10 minutes, the longer the better
Forgot to mention, added juice of an entire lime to the marinade, important to tenderize stuff
For the gravy, mush an onion
Heat up hella ghee in a saucepan, heat a skillet for the chicken
Add ginger, garlic, onyo to hot ghee and cook till the raw smell goes away
Add pretty much the same amount of spices as the marinade except the yogurt and the lime, and add a can of tomato
Add marinated chicken to hot cast iron as your sauce simmers
Keep turning, but ignore it for minutes at a time so it (burns) develops a nice char
Forget to put on the rice as you livetweet your recipe and drop everything, exclaim FUCK and put it on
When the chicken starts looking ready, turn off the heat and heat up the broiler for super extra char
Put it in the broiler for 2 minutes and blow a chef kiss
After:
Add to your sauce and mix it in
Chop cilantro while the sauce simmers more, glance nervously at your rice and then housemates as the look more and more annoyed BECAUSE IT’S 8 PM DEV, WHERE IS DINNER, WHY ARE YOU TWEETING
Add cilantro and a bit of cream to even out the flavors, stir for a minute and that’s it!
Done!
Serve with some Basmati rice (accidentally use jasmine rice instead, but that’s cool too because it’s delicious) or naan
Not exaggerating, or not to praise myself, but no joke this is probably the best think I’ve cooked, it’s really delicious.
