Eid Mubarak!

Today i am trying to make mutton biryani for my flatmate who is very sad she can't be at home for Eid. I have never cooked mutton before. May the gods go with me.
Her mom gave me her recipe and she uses saffron, almonds roasted in ghee, rosewater and I will absolutely not be following that recipe I have none of these things
Her mother has also just called to say that for them Eid is TOMORROW so now I will have time to marinate the half kg mutton that has just shown up so it will actually taste good tomorrow
I have never been so daunted by a food item in my life. I have looked at about eight recipes now and they all say something different and include such items as "cook til the nice smell of the masala comes"
Also her mom said "Cook the rice til it is just 70% cooked" aunty!!!! how do I know!!!!! I cook rice by putting it in exact proportions in the pressure cooker, letting it be for two whistles and then I pray!!!!
