Why would I need to experiment with a sugar cookie recipe?

It's because I'm unable to digest any grains or dairy and I'm in the middle of one hell of an eczema flare, so I need to remove
Grains/flour & baking powder
Dairy/butter
Eggs from the recipe.

Challenge accepted!!
Baking powder:

Two parts cream of tartar
One part baking soda
Two parts tapioca that just went through the coffee grinder to make it close to "starch".

Love my coffee grinder (and I won't fuss if my cookies taste slightly like my morning Java)
Egg substitute!

Two Tablespoons gelatin
Mixed with four Tablespoons HOT water and then set it aside (NOT in the fridge. Egg replacement, not jiggling mess of "well, that won't mix".)

I like a hand mixer for making the "eggs", as they tend to clump otherwise.
Ok, so here is what I have so far:

I'm substituting the butter with olive oil, so this may turn out too goopy, I don't know.

I won't care, either, if it TASTES GOOD .

If I can roll it out and use the cookie cutters I was given 4 Christmas's ago (finally), I'll be THRILLED.
Sugar cookies with no grains, dairy, or eggs:

Two "eggs" (4 TBSP hot water, 2TBSP gelatin mixed)
2/3 cup olive oil
2 tsp vanilla

MIX this together well. I made it frothy before adding in any dry ingredients.

3/4 c. Sugar
2 tsp baking powder (2 parts cream of tartar, 1 part
Baking soda, and 2 parts tapioca pearls that have been put through my coffee grinder until they're fairly smooth and "starch-like")
A shake of salt from the salt shaker on the table, because my brain always goes "add salt!" to baked goods, but I don't want much. 😂
I'm using Cassava flour, as that's my current favorite, and THEY'RE SELLING IT NEAR ME NOW!!! (Only an hour's drive instead of 3, and I can do a bunch of shopping instead of paying shipping on one thing.
IT LOOKS LIKE SUGAR COOKIE DOUGH AND TASTES GOOD!!

NO, I haven't baked any yet. I just got it all mixed and licked the spoon.
