People always ask me what I like to bake. Well, so let me just clear this out once and for all(cause I'm tired of being asked) - 1. I like wedding cakes. That was my fav class in culinary school. Because it is a process that takes a lot of planning and takes days.
Wedding cakes are complex and it's completely up to the client. Wedding cakes can also be extremely expensive as well. But you get to be the most creative with it(design-wise) if the client is willing to splurge. And it is so much fun because the layers of cake.
2. Chocolates. I LOVED MAKING CHOCOLATES in culinary school. Zero baking involved. It is again, process-driven. When you work with chocolate it always has to be the right temperature. Too hot and it can't be molded. Too cold and it breaks
You have to constantly warm chocolate and then temper it to the right temp. It is complex, challenging, and needs immense patience because it takes hours to make anything out of chocolate. To get it right that is.
3. Sugar art - this is special. Again it's complex. We used something called isomalt in culinary school. It needs to be heated to close to 400 F and then when it cools to around 275 F
or closer to 300 F(which is way above 100 celsius) then you start molding it with your hands. The most fun part was trying to not think about how it's burning your hands while trying to make something fun with it. We used regular latex gloves(doubled up) because
it's practicing to get used to that amount of heat and requiring a smooth shape. So we would try to not think of blistering fingers because it was always too hot but well it only works when it is too hot.

4. Last, I like bread baking. There's a bread formula btw.
And I invented my own bread recipe with the formula(there was a competition in class for who comes up with the best bread recipe with the formula) and I was Top 2. I won the ultimate challenge though cause more people voted for mine HA! (soooo competitive) lol Unfortunately,
I lost my bread recipe and my best friend wrote it down for herself and I don't think she'll ever share it with me even though it is MINE lol

Yeah, I don't like baking every stuff like most people lol I like complex, over the top and challenging. Also, don't ever ask me again
