They do this to bind civilian contestation. Sometimes this is done to solve the problem the led to military intervention, other times to ensure an ally or retired officer wins power
We should also consider what this would do to the officer corps. Coups can bring factionalism out into the open where officers start using parts of the military under their command to counter the political action of the initial coup plotters
Even if you eventually get democracy it is very difficult for civilians to then rebuild the firewall between the military and political contestation
It requires a high level of coordination amongst civilians and agreement on reestablishing the norm.

This can be hard because parties/politicians may have an incentive to use the military as a political tool even after it returns to the barracks
