Homemade bologna, a thread (in honor of bolo Tuesdays with @EHahnMD)
No photo of meat browning because I forgot.
Now cooking the soffrito, with onion, celery, and carrot, and a boatload of olive oil (plus whatever rendered from the meat)
Coming along!
Meat goes back in! (Ground chuck and chicken sausage in this instance)
Deglazed with wine
Then added the broth, milk, bay leaves, lemon and orange peel, cinnamon stick, fresh nutmeg, parmesan rind, tomato paste and salt & pepper. Now an adolescent sauce simmering away...
Simmering patiently, starting to thicken...
