This sort of thing is what made quant/math psych so intriguing to me as an undergrad. One of my favorite undergrad classes ended up being "human motor control and learning". Not because we talked about interesting/surprising effects, but because we learned about general laws underlying learning and movement. Compared to rote memorization, it was enlightening!
