What's the most regenerative, distributive, commons-based, feminist food you know of? For me it has to be sourdough bread. Why?....
1. It's regenerative because the essential ingredient - starter - is made from flour & water with wild yeast & a friendly microorganism (lactobacilli) found in the air. And it keeps on regenerating every day when fed a little more flour and water.
2. It's distributive because anyone can create starter, and then you can double, treble, quadruple it and give it away. Some starters have been spread far and wide across nations this way.
3. It’s commons-based because you can’t buy starter in the shops: it’s made within the community and shared between friends, family, neighbours. And that means the 'technology' is open and shared.
4. It’s feminist because it is soooo quick and easy to make sourdough - no need for long hours and complex recipes in the kitchen.
5. You can make it how you like it - add seeds, nuts, and more (this one has walnuts and sunflower seeds). And of course you can shape it how you like it. Mine is a sourdough-nut, of course.
Here's the recipe I was taught (thanks Lil and Mike).
At night, mix in a bowl:

500ml flour, 300ml water, 10g salt, 75ml starter

Leave overnight under a plastic bag 
(this all takes 5 mins)

In the morning: pop in it the oven and bake 40mins at 230 degrees C.

Delicious!
And don't forget to feed your starter: add a little flour and water.
Bread is older than metal, and has been made this way by cultures across the world for thousands of years. I'm no chef (at all) but I love being part of this long human tradition, and am proud of my loaves!
