Coffee science time!

@PilotCoffee Heritage, 18.0g in at 1.70 on the grinder... BUT this time there& #39;s a twist.

...we& #39;re going with the Rao over/under filter trick to try to increase extraction a bit.

When I had espresso made this way in the past (by an actual pro, not me) it kind of... Soft-focused the flavours a bit. Muted good blends sometimes but made single origins more approachable.
92°C, 36.6g out in ~45s. (I& #39;m a bad coffee scientist because I changed two variables at once this time: I used the @thirdwavewater Brew formula instead of Toronto tap water. Rather a lot of extra spray, in fact. Bit of a messier puck knock-out than usual, but I think that& #39;s just because I expected to have to knock it out as usual and instead it just slid out, so I messed it up a bit.

Surprising how much coffee ended up above the top filter! Huh.
As for flavour results, the extra filters seemed to do this time what they& #39;ve done previously: knock the sharp edges off the flavours a bit and blend it all together.

The Heritage beans didn& #39;t really need that help, but I& #39;ll try this with the Das Nascentes next time and see!
