I made cheesecake today. Here's a thread if you're cheesecake curious.

Filling Ingredients:
750g cream cheese
1 1/2 cups caster sugar
1/2 cup lemon juice (1/2 cup of any flavourinfg is fine)
1L whipping cream

Base Ingredients:
2 packets Arrowroot biscuits
250g melted butter
Break up the arrowroot, either with a blender or by hand. Pour in the melted butter, mix well and spread the base mixture in the dish(es) you want. Place in the fridge to help it firm up. Too much butter makes the base too hard, so go lightly if you want extra.
Cream the cream cheese and caster sugar well, then add the flavouring (lemon juice in this case). You can adjust the sugar depending on how sweet the flavouring is. Blend well then place this in the freezer to keep it cool.
Whip the cream till it's very very stiff. This recipe doesn't use gelatin so every bit helps the cheesecake texture. Then fold the cream cheese mixture in. Don't over mix it. 10 seconds is plenty. It should be stiff like in the last photo when you spoon it onto the base.
Spread the filling evenly across the base, add toppings and chill, preferably overnight. And that's it! A simple, no bake cheesecake!
