my coworker dry aged this hognose snapper for me for three days! he used a special knife technique to get the scales super close like that & in the three days it hung upside down, the flesh became so translucent white... so beautiful

i'm obsessed w the hognose snapper/hogfish! they are so beautiful. they are a type of wrasse that eat mollusks, crabs and sea urchins. they can grow quite large and this video makes me cry tbh:

also they are sequentially hermaphroditic! they begin as female and change sex to male when they are around 3 years old.

they are named for the way they root around in the sand with their "snouts" for mollusks and crabs. isnt that so cute. omg.

they have a beautiful taste bc of their diet and i feel really grateful to eat one tn!!!! wrapping in a banana leaf (its the best) after i rubbed in turmeric, salt, coriander and chili
