Tonight: jerk chicken! Served with banana guava ketchup and coconut rice and beans, it’s one of the most labor-intensive meals I make all year, but it’s freakin’ DELICIOUS and the leftovers are, if anything, better than the first serving of the dish.
This is why I buy my bay leaves and whole allspice in bulk...

Beverages tonight: seafoams, 3:2:1:1 pineapple juice, Plantation white rum, amaretto and blue curaçao. Shaken and served on the rocks. I went short on the liqueur shots, makes for a better level of sweetness....
