1 pound of dry chickpeas and 6 cups of water into the pressure cooker on high for 45 mins.
No instapot? No prob. Leave the beans in the water overnight, then the next day boil them till they're totally tender.
The most important spice is cumin. I like to buy whole seeds and toast and grind small batches. Toast until your kitchen smells like a middle eastern man's armpits. I use my own for reference, you'll have to find one.
I have a mortar and pestle, but some of you fancy asses have a spare coffee grinder or you can use that "spice grinder" you have for its actual intended purpose, heathens. Drain the beans, KEEP THE LIQUID, tbsp cumin, juice of one whole lemon, 2 tsp salt, garlic into the blender
Ok because I'm a dumbass i forgot to video this, but pour in the cooking liquid as you blend *very slowly* till you get to your desired consistency. Keep in mind it'll set more as it cools, so make it a bit runnier than you think you want.
Critical: tahini. I bring mine back from a little village in Turkey where my parents stay during the summer. One cup into the blender. Blend for like 3-4 mins. This seems short but it's a long fucking time to have a blender running.
We ended up with FOUR AND A HALF POUNDS of hummus. Let's do some math:
Chickpeas 1.29
Cumin 5c
Lemon 33c
Tahini $3
= $4.67 = 6.5c/ oz
