Za'atar is both herb that grows in the middle east & a spice mix typically of the herb, or mountain thyme, oregano, sesame seeds but varies per region.

You can mix it w/ oil & make manoushe, sprinkle it on spreads like hummus, have it w/ labne balls, or use it w/ meats & etc
Black Garlic. While its easy to get lost in the chemistry, its essentially garlic cooked at about 140° for a number of weeks.

It gives it a very sweet taste of umami. Uses can be ice cream, aoli, toast or bread crumbs, vinaigrettes, sauces, pesto, dehydrate to a powder & etc.
Rose water origin dates back to Persia (& what is now Iran). Has had medical & religious uses but is also culinary staple in Arabic cuisine.

From Rose syrup on K'nafeh,ice cream, Roz Bil Halib(rice pudding) to drinks etc. Maybe im geeking but its fragrance is honestly magical.
