Going with Out of Old Saskatchewan Kitchens as it ponders questions that may prove increasingly relevant
The recipe doesn't speciflcally say to slag off on mashing your potatoes while the dough rises to enjoy a beer in the sunshine, but it also doesn't say NOT to

Onto the filling stage: today we'll be stuffing our pierogi with potatoes, caramelized onions, sauerkraut and a myriad of existential anxieties
And done. I may not have the old world cred of Svetlana's Varenyky Emporium up the block but this turned out pretty delicious
