When I bought my sous vide, it came with a brisket recipe that takes 50 hours to make. In the Before Times, spending 50 hours on anything seemed insane to me. But we are in quarantine now, so let’s get this party started…
Full disclosure, I am not a cook and I have no training. I’ve never even made brisket before. So here’s go nothing.
Here’s what we’re working with. This particular piece came from our friendly neighbourhood butcher shop @RioFriendlyMeat
The recipe calls for 1/4 cup pepper and 1/3 cup salt.
Ok! Four pounds of beef doesn’t sound like a whole lot until you unwrap it, look at it, and remember everyone else in your family is a vegetarian...
Ok. We are all seasoned up. Going to cover this and let it sit in the fridge over night. That concludes Day 1.
