First up, Sourdough Bread Starter

1 c full fat sour cream
1/2 c warm water
3 tbsp unpasteurized apple cider vinegar
1/2 tsp instant yeast
1 c flour
Next, I'm doing sticky sesame chicken legs. I'm going to vacuum seal them when done in portions for easy meals. I'm going to do the same for a bunch of veg dishes tomorrow

So in the time it took my veggie dip to cook, I prepped the following (this is a double recipe) in a medium bowl:

6 tbsp soy sauce
1/4c brown sugar
1tsp red pepper flakes
1tsp sea salt
2tsp toasted sesame oil
1tsp black pepper
Minced ginger and garlic to taste

Then I added 8 drumsticks and thoroughly coated them, forgetting to take a picture

With the instant pot air fryer add-on, it comes with a double decker cooking rack

Cover the bottom with foil if you dont want it to turn to garbage

Add 4 drumsticks and spoon over some of the sauce

Next, cover the top rack with foil. Put it in the thing. Add more foil

Add 4 more drumsticks and spoon on sauce
Put it in the instant pot or air fryer

Air fry at 400 for 20 minutes

If doing a single batch on just the bottom, turn halfway through if you want all sides crispy

While my potatoes are cooking, I'm going to prep the roasted cauliflower tahini
In a medium bowl, you want to add:

1/4c veg oil
6-12 cloves of garlic smashed and cut into thirds
1/2 tsp each of ground cumin and coriander or 1tsp thana jeeroo
1/2 sea salt

Mix well and let it sit for a couple minutes

Okay. Amchoor aloo. Amchoor is a green mango powder & can be hard to come by, so I sub with a couple tbsp of lemon juice to get the tart of these tart and spicy potatoes

Also, ideally youd use baby yellow potatoes but in these times, I'm subbing with russets

In a medium bowl, mix the following:

1/4 veg oil
1 tsp ground turmeric
1 tsp amchoor or 2 tbsp lemon or lime juice
1 tsp sea salt
1/4 tsp each of ground cumin and coriander or 1/2tsp thana jeeroo
1/2 tsp cayenne pepper (if too spicy do 1/4)

That should have said 1/4 c veg oil

Any who, once mixed, add

4c quartered peeled yellow potatoes or 4c 1/8 russet potatoes or whatever potatoes you gave on hand and toss

Then I let it sit for about 5 minutes

Place in the air fryer basic

Cook at 400 for 15 minutes or until tender with fork prick

When serving, each portion (there are 4) needs half a fresh lemon to drizzle on potatoes and a bit of chopped cilantro or parsley (omit if yuck)
