#lazychef thread.
Cooking is as intricate or as simple as YOU want it. Today I knew we'd be road tripping, so cooking time would be limited. We came back earlier than expected, but I've been drinking. So Lazy Cooking it is. Here we go.
1. I had put a tray of
boneless chicken thighs in the fridge to thaw.
2. Came home and rubbed them up with Maggi ginger & garlic seasoning & red wine vinegar & soya sauce.
3. 2 hrs later, I used my food processor to grind & combine garlic, escallion & scotchie. Rubbed this into the preseasoned thighs
Spread them out on a foil lined baking sheet
3. Took out all the odds & ends that are veggies from my fridge: half a cauliflower head, piece of pumpkin, small head broccoli, pk string beans, 1/2 sweet pepper, piece onion. Chopped em up, some oil, seasoning & garlic powder,
salt, spread them all on a flat baking sheet.
3. Oh! I had a tray of bulk bacon too. Chopped that up and mixed in w the veggies.
4. Chicken & veggies in the oven. High temp. I'm sipping more rum. It'll be ready in 60 to 90 min.
How easy is that? 😁
