Chicken, Shish, Kofte and Donner

Next the chicken.... follow the recipe and the method.
Mixing the Donner
Once mixed.... take 300g of the mix for 4 kofta, the rest shape in to a large meatloaf shape, this is the Donner meat.
In a tin double wrap the Donner meat in greaseproof paper and tin foil, shape the kofta onto skewers.
The flatbreads.....

Bring the dough together, and knead on a floured surface until it comes together. Cover with a bowl for 30 minutes

After 30 minutes, cut the dough into 4 and roll out, leave to stand for 10 minutes.
Then roll them out to the size of the pan you will cook them in.

In a heavy cast-iron or non stick pan(heated on the stove for 5 minutes) place your rolled out dough and cook on a medium heat for 2½ minutes on each side.
Cooking the meats.....

Gas mark 5

Put Donner meat on top shelf for 40mins.
After 40mins take out turn over and re-wrap.
Put back in oven for another 40 mins. At the same time put in the skewers. After 20mins switch shelves to finish cooking

When cooked, rest the Donner for 5 minutes, and then thinly slice. Now you're ready to go....
Prep yourselves some salad, get your sauces and you're ready to go.....
