So I decided I was going to make a 8/10 skill level dish (arroz imperial) that my momma used to make. I tell my mom my plans and she says the same thing she always says when half listening "mmmhmm yeah just follow the recipe". Okay cool that's simple.

Are you POSITIVE there's no extra magic u do to this dish to make it taste the way I remember?

Mom: no Carissa, just follow the recipe.

Me: aiight bet
So I'm cooking WELL into the night bc the sauce mixture will not set. I'm deadass feelimg aggravated bc it's my bed time and I still gotta pop this shit in the oven
Anyways, I taste the sauce. It's still a little runny, still not setting but it taste great so I pop it in the oven and wait. I already have a strong feeling that this won't be the same texture but maybe the sauce will thicken when it bakes
I take it out and just as a I suspected bc the sauce was thick the rice never really clumped together like a casserole so it's just some free flowing rice n seasoned chicken . At this point I'm rereading the recipe like what did I miss
I call my mom bc I ain't miss shit, like I knew I didn't. And just fyi my mom is a night owl, her awareness is heightened at the times between 11pm-6 am. So now she's full attention. I tell my mom what happen feeling kind of defeated and this woman, on my life, told me this:
Oh you're making the arroz imperial with the recipe from my book? Okay listen steps 6-14 u can't do it like it says, u gotta cook the peas in a different pot, add more tomato sauce, dump it in slowly, and layer the cheese not just at the top OR THE SAUCE WONT THICKEN
Me:
It still taste good, but the real texture just ain't there. In conclusion, for all my followers out there wondering y ur dish don't EEVVEERR hit like how ur momma makes it:
It's cause mom's loovve to skip, delete, divide, n pemdas steps of the recipe w/o telling a soul and then ur left wondering y ur dish taste great value and not name brand like how u remembered
