I am starting to make sourdough. It's 48 hours and my starters seem to be active. "Bob" (for we are legion) now has an elastic texture and is slightly fluffy.
Before feeding, Bob (or as much of them as I could remove from the jar) weighs in at 178g.

Bob's origin is wholemeal flour and water, they've been living in a jar on top of my network switch were it's a nice 25c.
"Albert" on the other hand had an elastic texture 24hours ago - and same again today, not much of a change.

Albert's background is somewhat diverse, he comes from the dried fruit in some musili and other saltanas, dates, and dried apricots. Albert lives inside the yoghert maker.
Here are the boys (yeah, I admit it's a sausagefest - at least they're wholegrain and not white). As you can see they're good mates and both are hopeful for their next milestone of growth-spurts.
If you can't tell that's Albert on the left and Bob on the right. I can tell, it's a parent thing.
Oh. And Albert shares his name with a mold David Lister was growing in Red Dwarf.
And this is half of Charlotte. The other half is in the freezer. Tomorrow she will be croissants.
Here is Charlotte today.

Rise my pretties. Rise!
