18 March: received email from eJ notifying flights cancelled.
Requested refund online, and received confirmation stating refund will be processed in 7 days (see image attached).
7 April: submitted a claim against eJ with HM Courts & Tribunals Service to recover full amount for flights + £25 court fee.
9 April: received Acknowledgment of Service from eJ legal assistant stating 'I intend to defend all of this claim.'
eJ now has 28 days to file a defence.

Perhaps, eJ won't file a defence, instead choosing to time-out, allowing the court to make judgment in my favour. In so doing, eJ might avoid potential precedence-setting judgment against it, whilst still not explicitly accepting liability. Fingers crossed.

On 16 April I received the following email from eJ:
'I am sorry about the issues that you have had with your refund. I have processed a refund of £X for you today. This can take 3-5 days to appear in your account. I hope that we are able to welcome you on board soon.'
Thus, instigating legal action in the small claims court appears to have compelled easyJet to honour the refund. The £25 court fee will not be recoverable, because eJ's refunding now means that I must withdraw my claim. In so doing they've avoided having to file a defence. END.
