Today’s recipe is pantry staple and my favourite flavour enhancer for almost everything. Chili Garlic oil, once you start making this you will want it in your pantry all the time

Ingredients - I like using sesame oil for this but any vegetable oil works.
Prep all your ingredients before you start. That’s actually my tip for everything especially if you are new to cooking. When everything is organised it’s easier to follow recipe without frustration
Add all the ingredients into a stainless steel or thick ceramic bowl bowl (basically, anything that is heat proof).
Heat the oil in a saucepan over medium-high heat for about 3 to 4 minutes. Turn off the heat.
Pour the hot oil into the bowl with the spices. Be very careful. The oil will sizzle a lot when it first hits the spices. Let it cool completely. This method prevents the spices from burning.
After the oil completey cools, Store in the fridge in a glass jar. Give the oil a stir before serving. I like to store it in two jars. One smaller one which I keep outside (lasts for a week) then take out the next from fridge. Fridge one lasts fairly long
To use drizzle over anything you want. Here are a few ideas
1. Pour over noodles, fried rice & dumplings
2. Finish soups with it
3. Drizzle over eggs
4. Use in salad dressings
5. Use in grilled meats/fish
6. Use it as a base for stir fry
7. Pour it over your dal as tadka
