Holy Thursday:
Focaccia! This peasant dish is meant to remind you of the food shared at the Last Supper. It’s a thick bread served with light toppings, and you eat as much as you can because the Good Friday fast starts at Midnight!
Holy Saturday/EASTER:

The casatiello is a mix of cured meats, pecorino cheese (made from sheep’s milk & used to feed lambs), lard, and eggs all rolled into a bread that is served immediately following the Easter Vigil(!!), officially ending the Lenten fast from these foods!
FIRST COURSE:
Antipasto!
