We all live high stress lives. Add to that packaged food, hidden excess salt consumption, sugar, refined oil etc. What this does is the modern day curse - lifestyle diseases. Blood pressure , diabetes, cholesterol, obesity etc
This means that repeated mental stress, bad food habits put our bodies under routine oxidative stress. Our bodies ability to oxygenate itself, immunity along with external factors like pollution means we are already compromised to begin with.
Of course what is saving India is our insistence on hygiene, fresh cooked food, traditional eating habits. NO is now being used in clinical trials. This makes sense as it enhances body’s ability to fight oxidative stress. In traditional cooking we use alkaliners which are

America is a huge consumer of packaged food, sugar and salt. Thus could mean the protein was able to attack them more aggressively. It’s possible. Either way, despite our numbers, our heritage has saved us again.
Hope this will be a wake up call for those moving towards more western lifestyles that our traditional methods, hot food, fresh food, hygiene, non packaged, less processed foods should be the only way ahead
