Hi hello yes, I have eaten a bunch of good things in the last day, and I am going to tell you about them.
1. Mark Bittman& #39;s recipe for "chickpeas provencal" is good...

It& #39;s even better when you ignore the recipe, make dried chickpeas, put them in a bit of the aquafaba, add some parmesan broth, drizzle basil infused olive oil, and throw in some day-old chunks of French bread.
Parmesan broth is incredibly easy and, added benefit, uses the leftover parm rinds from your blocks of parmesan. It& #39;s delicious. I promise.
2. avocado toast - bit of an indulgence tbh because avocados were $2.50 each O_O

3. I made the smashed cucumber salad from @smittenkitchen& #39;s second cookbook - smashed Persian cucumbers with a dressing of toasted sesame oil, rice vinegar, a dash of sake (I used mirin bc I had no sake), and red pepper flakes, topped with crushed wasabi peas and peanuts.
4. Potatoes and asparagus gribiche - this is another Smitten Kitchen recipe. I& #39;m a sucker for a well-tested cookbook.

This is sort-of-potato-salad. New potatoes & asparagus dressed w gribiche - Dijon, hard-boiled egg, white wine vinegar, olive oil, cornichons, capers, shallots.
It& #39;s a delight of vinegar and mustard and salty and umami flavors. I& #39;m not usually into potato salad, but this is certainly an exception.
I just finished making baked oatmeal with caramelized pears and vanilla cream.... it& #39;s for breakfast though.
In the category of Things I Did Not Make: I ate some salted peanut butter chocolate chip ice cream that made me prettttttttty happy.
