1) My wife’s carnitas recipe: 4-6 lbs. pork roast that is cheap like a boneless butt roast. Cut it into cubes, keeping the fat. Put into a deep pan that you can cover and have enough room to stir. 1/2 tsp salt, 3 cloves garlic halved, 3/4 cup orange juice or
2) 3-4 oranges squeezed and then throw the slices in the pan with the meat. Fill pan with water, covering the meat and stir it all up. Bring to a boil and then turn down to medium heat and partially cover. This allows the water to steam out which can take 45-1hr.
