Who has the best recipe for making potato somethings -- fries, crisps, rounds, whatever -- that are crispsy, fatty without being soggy, salty, and can scratch my itch for the kind of skinny perfect pile of fries that come with a good steak frites? No deep frier here, just an oven
And they don't have to be fries! I am considering crispy little rounds to optimize the surface area to crisp & salt ratio, since baked fries are always a little sad. But curious what you all like. I got my hands on a steak and I am VERY EXCITED for dinner tomorrow.
Another thing I don't have: A huge amount of oil. Or peanut oil. Or any oil that isn't olive oil, coconut oil, or sesame oil. I KNOW, I'M SORRY.
Oh the other thing is that I hate thick-cut potato anything. I know, I'm sorry, but no thick fries. No potato wedges. No chunks of potato. I want very little inside, very much crunchy salty outside.
