Shakshuka + toasted English muffin bread. Using up more of the bell peppers and grape tomatoes I had left. First time making this English muffin loaf — it’s really good and hearty. Subbed goat cheese for feta and it was still delicious~

...ok this might be the best pasta I’ve ever made. Combo of rehydrated mushrooms, leftover shakshuka (sans eggs obv), toasted spiced chickpeas, various veg + chicken I needed to use up, and served with Greek yogurt.

Blistered cherry tomatoes + crumbled goat cheese on avocado toast, and peach prosciutto flatbread. #QuarantineKitchen
Had apricots to use up - mostly stone fruit tort, and finished up the last of the prosciutto with some summer veg for a light pasta with peach apricot lemonade. #QuarantineKitchen

I thought I was recording video but wasn’t 😒 anyway, first attempt at kichi kichi omurice went pretty well. Served over leftover garlicky turmeric rice with the rest of the spiced toasted chickpeas and scallions, and smothered in a Japanese style curry gravy. #QuarantineKitchen
