Chocolate souffle #2! Different recipe, I'm making a chocolate crème pâtissière base in a different way time, flavouring with a chocolate ganache. I hope this works...
(*this time) REDID EVERYTHING! The base didn't turn out--the eggs didn't temper properly and scrambled, so I just repeated the crème pâtissière. By then my egg whites deflated slightly, but they were still okay. Way better than last time so far...just have to wait...
