Fresh Crusty Bread - straight from the oven. Today’s #coronacooking recipe is a ‘no knead’ yeast bread. This takes minutes to put together - a little time to proof, and 45 mins to bake. A fresh, crusty loaf in about two hours. You most try this one. #baking #bread
Ingredients:
400g plain flour
7g dried yeast
1tsp sugar
1tsp salt
360ml warm water

I usually use strong white flour to make bread - there’s none of that in the shops here right now - I know the same is true for lots of you. But you can make this with plain flour. #coronacooking
Dissolve the sugar in the warm water in a bowl or jug. Add the yeast and allow it to dissolve and activate. You’ll know it’s ready when it froths up on the top of the water. #coronacooking
Sieve the flour & salt into a big bowl. When the yeast mixture is frothy, pour into the flour & stir well to mix it. This will be a very wet dough. Don’t worry - it is meant to be. Cover the bowl with cling film & allow to proof for 1 hour- it will double in size in that time
While it is proofing, warm the oven to 220c. Put a cast iron casserole in and heat that up at the same time. After 1 hour, turn the dough out onto a floured surface. Again, it will he very wet - don’t freak out - it is meant to be. Sprinkle it with a little more flour.
Now fold it back on itself about four times to form a soft ball of dough. Line a bowl with grease proof paper and carefully pop the dough in to that. Cover with a towel and let it rest for 15 mins.
After 15 mins, carefully take your casserole dish out of the oven, it will be very hot, and pop the dough, still in the paper, into the dish. Cover and put it back in the oven. Bake for 40 mins. Then remove the lid and bake for another 15 mins to get the crust nice and golden.
After 15 mins, take it out. Remove from the dish and the paper and allow to cool on a rack. And that is it. It’s really that simple. Beautiful, crusty freshly baked bread. Listen to how lovely and crusty this is!

No kneading and no fuss. I’m about to have this with some of the Chicken, Chorizo & Chickpea casserole I made on Saturday - bliss. Or you could have it with one of the soups I put the recipes up for recently. Enjoy!

Ooops. Just had a typo pointed out in this thread. This one should have read ‘Bake for 30 mins. Then remove the lid and bake for another 15 mins to get the crust nice and golden.’
