I picked up some Beyond-brand "pork" sausage on the last grocery run. Had it this morning with the pottage.

I am *genuinely impressed?* I would absolutely believe this is real pork sausage if I didn't know better.
It's not "a lot like pork sausage." It's not "a decent replacement for pork sausage."

It's indistinguishable.
I want to make biscuits and gravy this week, so I picked up some Beyond "ground beef," too.

I'm excited to see how well it does.
