for World Autism Awareness Day, I wanted create something inspired by autism.

It is a play on a Napoleon: layers of almond wafers, lime basil swiss meringue buttercream, fresh raspberries & hot honey.

So me explain how I was inspired: (con't)

The 2 small desserts on the plate are identical w/ no clear certainty that 1 is not like the other & for the most part they are.

The have the same components, but 1 packed w/ the bold flavors of the basil, lime & hot honey & the other has all those same flavors but muted.
So the idea is they look the same visually and essentially are the same, they are each just slightly different experiences. Like how people with autism just experience things a little differently than others who do not have it.
Something, people w/ autism go through is sensory overload. A symptom some may experience is their hearing or taste being over or under sensitive. For example, someone with autism may like their food very spicy or may find subtle flavors too much.
Which is why I chose to do identical desserts w/ just a difference in the level of flavor brightness.

I also wanted to do a spectrum of unexpected flavors & textures (crunchy, sweet, hot, creamy, etc) because autism is a spectrum disorder.
Basically what that means is autism can manifest in a lot of different ways & every case is unique. Some may have trouble w/ how they socialize, communicate or learn.

So for the month of April, I have committed to doing a mental health series w/ desserts inspired by disorders.
Every week, I will do a different dessert that is based on a mental health disorder.

When I completed my World Bipolar Day dessert a few days ago, the reception I got was amazing & I wanna continue to educate others & end stigmas thru a non-conventional way.
