Good food is one of the few things getting me through this time right now, so here is a thread of some of my favorite blog recipes I've stumbled on over the years

First up, chorizo bolognese.
THIS DISH.
So flavorful. So delicious. The chorizo + red wine sauce makes it as much a summery dish to me as a winter one. It's a go-to.
Burrata works well if you don't have buffalo mozzarella.

Next one is vegetarian (and easily vegan):
Moroccan chickpea + lentil stew
It's a crockpot recipe that takes a bit of chopping ahead of time, but... that goat cheese and slivered almonds on top with some parsley/cilantro/mint/whatever? Amazing. https://www.halfbakedharvest.com/crockpot-moroccan-lentil-and-chickpea-soup/

A fish recipe (I have so much frozen fish right now):
Zesty East African Stew w/ Tilapia
You probably notice I'm not a fan of side dishes lol. I am a one pot or bust sort of cook.
Also all the food on this blog is delicious

A breakfast/brunch recipe that is TRULY a staple for me: shakshuka
https://thecookingjar.com/eggs-hell-shakshuka/
There are also so many delicious variants of it. This one in particular is a favorite: https://www.halfbakedharvest.com/northern-indian-style-baked-eggs-green-harissa-naan/

This one is another vegan stew, but WOW is it delicious. I might just have a special passion for smoked paprika but... I love this recipe. Bonus points that it happens to be healthy.
Hint: do not skimp on the lemon!!! https://thefirstmess.com/2020/01/01/smoky-chickpea-cabbage-lentil-soup-vegan-recipe/

I'm sensing a stew pattern sorry I know it's April I swear
If you're also a big cilantro fan and happen to have an overwhelming amount of seafood in your freezer... This stew does, in fact, feel more spring/summery https://www.feastingathome.com/peruvian-seafood-stew-cilantro-broth/

MORE FISH (I was a pescatarian for several years)
This is extremely rich, so I serve it with vegetables/salad to balance it out. But the tilapia just... melts in your mouth. It's probably all the butter. https://www.recipetineats.com/baked-fish-with-lemon-cream-sauce/

For when you are absolutely craving olives and feta (which I do basically daily)
Also I realized I had yet to post a chicken dish lol https://theforkedspoon.com/olive-chicken-and-lemon-rice/
