The writers room is a continuous lesson in fine tuning. Not just in terms of story but also with regards to process.

e.g. We went from a character bio doc by me, to a spat of different ones from every writer, to (today) a shared doc we can all edit to update characters as we go.
My original character bio doc was an update of the original by the showrunner. Once the writing team was hired we started tweaking and developing characters in ways that contradicted that early document.

And that can keep happening as we go.
Mostly though the new doc exists so everytime we introduce a new minor character, an antagonist, a new major character, there is someplace the script writers can go to find out who that person is and how important they may be to future storylines.
Writing bios can be a lot of fun. It reminds me of collecting superhero trading cards as a kid.
